The pizza places don't exist to launder the money, they are a hook up place. James 'I love children' is also an 'art' dealer, that is where the money will be laundered because the value of the items can be falsely inflated with out a receipt from a manufacturer. Just like antique shops.

If you live near, you could do recon and get a fair estimate, number of customers per day & average $cash spent numbers in comparison to similar businesses. The very small pizza shop near me (fairly rural and dependent on seasonal business, their overhead is $600 per day).

You could monitor the web cam? there are enough legitimate pizzashops and restaurants that survive irl so Comet ping pong would probably profit without having to be a CIA cover, although maybe not enough to support Alefantis's other real estate

You should try contacting a CPA. The tax program they use compares your business to other 'like' business, so they should be able to find the average filling for the average pizza place in the area.
